Thanks Janice - I was unable to get anything thin enough under the edge of the back to pop it off... however I did come up with a way that worked...

Get some scotch double-sided foam tape (like at Home depot or lowes) and cut out a circle of it roughly the size of the watch back. Make sure you clean off the watch back first with a little rubbing alcohol before applying the foam tape to the watch back as any oils can reduce the adhesion). Apply the foam tape to the watch back cover and then find something flat that the tape will adhere to (i used a metal ruler) and press that against the other side of the foam tape - now using some pressure it was easy to leverage the ruler a little and "pop" the back off the watch - and the foam tape was easy to remove afterwards from the watch back.
