How do I convert the speed displayed on my t6c into miles per minute? For example, I have no idea what a 5.0 means. Is that an 11 minute mile, 11:30 minute mile, etc?

Why don't you change the speed display for the foot pod or whatever pod you use to min/mi? It is done in the SPD/DST menu in the calibration option.
